Today, while large factories have taken up its production, adding stabilizers, preservatives, and artificial enhancers, the true essence of Zefir still thrives in smaller, artisanal confectionery shops. These shops, like ours at Blissberry Desserts, honor the classic methods of Zefir-making, using natural ingredients without any artificial substitutes.

At Blissberry Desserts, we craft our Zefir by meticulously whipping egg whites with sugar to form a fluffy meringue, then gently folding in fruit or berry puree along with agar—a natural, algae-based thickener.
